During the aging process (especially very old cheddar) certain chemicals are produced which could bother a person with a compromised immune system. I think if you go to a search engine, you may be able to get on the subject of aged cheddar and determine what the chemicals are that develop to give aged cheese its sharp taste. These chemicals might affect a sick person in a negative manner.
