Chevre is illegal, but you can make a close approximation by dripping
goat
milk yoghurt. The proteins in goat milk are more delicate than those
in cow
milk, and so when you sterilize your milk, it should not be heated
about
185º Farenheit. The shorter proteins in goat milk also make it more
