Glycerin
/ Glycerol
Elaine writes:
Since glycerin is not a sugar to begin with, the "ol" at the
end does not
make it a sugar alcohol. Glycerin is considered to belong to the fat
family. So does glycerol.
Seth writes:
Glycerine is legal. If it were not, then fat wouldn't be allowed either.
Glycerol is what attaches three fatty acids to get a triglyceride. The
body can convert it into a carbohydrate, but it is not a carb.

I found a very good article
on glycerol and it has reconfirmed my previous feelings that it is fine.
Here is the URL http://www.chem.yorku.ca/hall_of_fame/essays96/glycerol.htm
I don't think I would use it in baking but I would have to study it a
bit more.
