Monterey Jack

There was some concern that Monterey Jack cheese was not properly aged and
so not SCD™ legal...

Elaine writes:
I just spoke to Richard Kessler at Advantage Foods. He said that Monterey Jack is an aged cheese except when it is in the form of being spreadable or in a tub which indicates that there has been some food processing technique involved. Of course that goes for any cheese.
