Elaine writes: There is no substitute for white rice except the spaghetti squash or the mock mashed potatoes (cauliflower). There are some things we must sacrifice in spite of the fact that intestinal microbes are"screaming" for the starch. By the way, if your child does not have diarrhea, you can soak, throw away water, and boil the white beans. If the child is making good progress, they can be used instead of rice. However, if the child is still not making intestinal and behavior progress, then put the boiled beans through a strainer (eliminating the fibrous skins) and use them occasionally alternating with the mock mashed potatoes, etc.
